How to make sous vide spareribs with sweet and spicy marinade
These sous vide spareribs are slow-cooked for 24 hours, resulting in fall-off-the-bone tenderness while maintaining deep flavors from the sweet and spicy marinade. A final sear on the grill, barbecue, or oven caramelizes the surface for a perfect finish.
Ingredients
For the marinade
- 1 tbsp Sriracha garlic chili sauce
- 1 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tbsp ginger syrup
- 1 tbsp fish sauce
- 1 tbsp olive oil
- 75 g brown caster sugar
For the sous vide spareribs
- 2 large spareribs (approx. 2 kg)

Preparation method
Make the marinade
In a bowl, combine Sriracha, oyster sauce, soy sauce, ginger syrup, fish sauce, olive oil, and brown sugar. Stir until well blended.
Prepare the spareribs
Preheat the sousvide waterbowls to 67°C using the sous vide stick.
Cut the spareribs into smaller portions so they fit inside the vacuum bags. Generously brush the ribs with the prepared marinade, ensuring they are fully coated. Place them into vacuum bags and pour in any remaining marinade if needed. Seal the bags tightly using a vacuum sealer.
Cook sous vide
Submerge the vacuum-sealed ribs in the preheated water bath and cook for 24 hours. This long, slow cooking process makes the meat incredibly tender while locking in the flavors.
Remove and prepare for grilling
After 24 hours, take the bags out of the water and carefully cut them open. Drain the liquid—this flavorful broth can be repurposed for an Asian-style noodle soup. Remove the ribs from the bags.
Tip: If you don’t open the vacuum-sealed bags, you can store the ribs in the freezer for later use and grill them whenever needed.
Grill for a crispy finish
Heat a barbecue, grill pan, or oven with the grill function.
Grill the cooked spareribs for a few minutes per side, just until they develop a crispy, caramelized crust.
Serve
Enjoy the spareribs straight off the grill with your favorite dipping sauce or side dishes like coleslaw, pickled vegetables, or rice.
