Sous vide king oyster mushrooms with garlic butter & tarragon
Looking for a plant-based side dish or main that’s rich, umami-packed, and seriously impressive? These sous vide king oyster mushrooms are infused with garlic and fresh herbs, then pan-finished with golden butter and tarragon. They’re meaty, flavorful, and versatile, perfect alongside steak, grains, or as a gourmet vegan centerpiece.
Sous vide cooking ensures the mushrooms retain their natural juiciness while becoming tender and deeply infused with aromatics.

Ingredients (serves 2–4)
- 450 g king oyster mushrooms (or trumpet mushrooms)
- 60 ml extra virgin olive oil
- 4 garlic cloves, peeled and lightly crushed
- 4 sprigs fresh tarragon
- 60 g unsalted butter
- Salt and freshly ground black pepper

Preparation method
1. Preheat and prep
Set your sous vide stick to 85°C. Clean the mushrooms and trim the ends. Place them in a vacuum bag with the olive oil, garlic, and 2 sprigs of tarragon. Seal tightly.
2. Sous vide the mushrooms
Submerge the bag in the water bath and cook for 1.5 hours. This gentle cooking locks in moisture and enhances flavor.
3. Sear and finish
Once cooked, remove the mushrooms from the bag and discard the liquid. Slice each mushroom in half lengthwise and season with salt.
Heat the butter in a large sauté pan over medium-high heat until just starting to brown. Add the mushrooms cut-side down and cook until golden and caramelized.
Flip the mushrooms, add the remaining 2 sprigs of tarragon, and continue cooking for about 5 minutes, spooning the butter over the top as they finish.
4. Serve
Transfer the mushrooms to a paper towel to absorb any excess butter. Season with freshly ground pepper and serve warm.
Serving tip
These mushrooms are delicious on their own or served over creamy polenta, wild rice, or as a gourmet side to sous vide steak. For a vegan version, swap the butter for plant-based margarine.
