Juicy sous vide burgers with a perfect sear

From rare to well done, this precision technique gives you total control, locking in flavor and moisture.

Ingredients (for 2 servings)

  • 450 g freshly ground beef (about 225 g per burger)
  • Kosher salt
  • Freshly ground black pepper
  • 2 slices of cheese (optional)
  • 2 toasted burger buns
  • Toppings of your choice (lettuce, tomato, onion, pickles, etc.)

Preparation method

1. Preheat your sous vide

Fill your water container and preheat the sous vide stick to your desired doneness temperature (see chart above).

2. Shape the burgers

Divide the ground beef into two even portions. Gently shape into patties about 1–1.5 cm wider than your buns. Avoid overworking the meat—just press enough to hold its shape.

3. Season and seal

Generously season both sides of the patties with salt and pepper. Place each burger in its own vacuum bag (or zipper bag using the water displacement method) and seal tightly.

4. Cook sous vide

Submerge the sealed patties into the preheated water bath and cook based on your preferred doneness (e.g., 54°C for medium-rare, 57°C for medium).

5. Rest and dry

After cooking, remove the patties from the bag and pat them very dry with paper towels. Let them rest for 10 minutes. This helps form a better crust when searing.

6. Sear

Heat a cast iron skillet over high heat with 1 tbsp oil and a bit of butter. Once hot, sear the burgers for 45–60 seconds per side until deeply browned. If using cheese, add it after the flip so it melts while finishing the sear.

Assembly

Toast the buns and prepare your toppings. Place the burger patties on the buns, layer with your desired ingredients, and serve immediately while hot.
