Ingredients

  • 2 steaks, each of 200 grams (entrecôte)
  • Salty
  • Pepper

 

Preparation method

  1. Score the steaks, season with salt and pepper and vacuum seal them individually in a bag.
  2. Then cook the steaks for 45 minutes at 54° C in the water bath for medium-rare, or check our sous vide steak temperature for the cooking of your choice.
  3. Remove the sirloin steak from the bag and fry the steaks briefly at a high temperature in the pan, on the grill or with a burner. Let the meat rest for a few minutes before serving.
