Sous vide eggs Benedict
A creamy and elegant brunch classic with perfectly cooked sous vide eggs
Rich, creamy, and beautifully balanced, sous vide Eggs Benedict is a refined twist on the classic brunch favourite. By cooking the eggs sous vide, you achieve a perfectly set white with a silky, flowing yolk every time. Combined with toasted muffins, savoury toppings and a smooth hollandaise sauce, this dish is ideal for a relaxed yet impressive breakfast or Mother’s Day brunch.
Ingredients (for 2–4 servings)
Eggs
- 4 large eggs
Base
- 2 English muffins (halved)
- 4 slices smoked salmon or ham
Hollandaise sauce
- 3 egg yolks
- 150 g unsalted butter
- 1 tbsp lemon juice
- Salt
- Black pepper
- Optional: pinch of cayenne pepper
Garnish
- Fresh chives or parsley
Equipment
- Sous vide stick
- Vacuum sealer
- Vacuum bags
- Sousvide waterbowls
- Blender or hand blender
- Small saucepan
Preparation method
1. Preheat your sous vide
Set your sous vide stick to 63°C and allow the water bath to fully preheat.
2. Cook the eggs
Carefully place the eggs (in their shells) into the water bath and cook for 45 minutes.
Once cooked, transfer them to a bowl of warm water to hold until serving.
3. Prepare the hollandaise sauce
Melt the butter gently until fully liquid, but not too hot.
Place the egg yolks and lemon juice in a tall container. Using a hand blender, slowly add the butter while blending continuously until the sauce thickens and becomes smooth and glossy.
Season with salt, pepper and optional cayenne. Keep warm without overheating.
4. Toast the base
Toast the English muffins until golden and crisp.
Lightly warm the smoked salmon or ham if desired.
5. Assemble
Place the toasted muffins on plates and add the salmon or ham.
Crack each sous vide egg into a small bowl and gently place it on top.
Spoon the warm hollandaise sauce over the eggs and finish with chopped chives or parsley.
Serve and enjoy
Serve immediately while warm, optionally with grilled asparagus, avocado slices or a light salad.
