Sous vide duck breast with mango purée

Tender, juicy and full of flavour, this sous vide duck breast is paired with a smooth mango purée for a beautifully balanced dish. The precise sous vide cooking ensures perfectly cooked duck every time, while a quick sear creates a crisp, golden skin. The natural sweetness and freshness of mango complement the rich duck, making this dish ideal for a special dinner or a refined Mother’s Day menu.

Ingredients (for 2 servings)

Duck

  • 2 duck breasts
  • Salt
  • Black pepper

Mango purée

  • 1 ripe mango (peeled and diced)
  • 1 tbsp lemon or lime juice
  • 1 tsp honey (optional)
  • Pinch of salt

Optional garnish

  • Fresh herbs (such as coriander or parsley)
  • Extra black pepper

Preparation method

1. Preheat your sous vide

Set your sous vide stick to 54°C and allow the water bath to fully preheat.

2. Prepare the duck

Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

Vacuum seal the duck breasts and place them in the water bath. Cook for 1.5 to 2 hours.

3. Prepare the mango purée

Place the diced mango, lemon or lime juice, honey and a pinch of salt in a blender. Blend until smooth and silky. Taste and adjust if needed. Set aside.

4. Sear the duck

Remove the duck from the bag and pat dry thoroughly.

Place the duck breasts skin-side down in a cold pan and gradually bring to medium-high heat. Render the fat and cook until the skin becomes crispy and golden. Flip briefly to sear the other side.

Let the duck rest for 5 minutes before slicing.

Serve and enjoy

Spoon the mango purée onto the plate and arrange the sliced duck breast on top or alongside. Finish with fresh herbs and a touch of black pepper if desired.
