Honey-thyme sous vide carrots with lemon butter glaze

Cooking carrots sous vide at 85°C intensifies their natural sweetness while preserving their vibrant color and texture. The gentle infusion of honey, butter, and fresh thyme makes them a perfect match for Easter salmon, lamb, or a festive brunch table.
Ingredients (serves 4)
- 800 g carrots, peeled (leave small ones whole, halve thicker ones lengthwise)
- 40 g unsalted butter
- 1½ tbsp honey
- 3–4 sprigs fresh thyme
- ½ tsp fine sea salt
- Freshly ground black pepper
- Zest of ½ lemon (optional, for finishing)
- Optional serving idea:
- A spoonful of lemon yogurt (Greek yogurt + lemon zest + pinch of salt)

Preparation method
1. Prepare the carrots
Peel the carrots and cut them evenly so they cook uniformly. Smaller carrots can stay whole; thicker ones should be halved lengthwise.
Place them in a vacuum bag with the butter, honey, thyme sprigs, salt, and pepper. Distribute everything evenly and seal tightly.
2. Cook sous vide
Preheat your sous vide stick to 85°C.
Submerge the sealed bag fully in the water bath and cook for 1 hour.
For softer carrots, you can extend the cooking time up to 1 hour 30 minutes.
3. Reduce and glaze
Remove the carrots from the bag, reserving the cooking liquid.
In a wide sauté pan over medium heat, pour in the reserved juices and simmer until slightly reduced and glossy. Add the carrots and gently toss until coated in the glaze.
Finish with a touch of fresh thyme leaves and a light sprinkle of lemon zest for brightness.
Serving suggestion
Arrange the carrots on a serving platter and spoon over the buttery glaze.
